Gluten-Free Banana Bread

These loaves are so easy and fast to make. I can say this is one of my favorite recipes, works as a snack, breakfast or dessert.

| Makes about: 2 loaves |

Ingredients:

  • 2 ripe bananas

  • 1/4 cup of rolled oats

  • 1/4 cup of almond milk

  • 2 tsp chia seeds

  • 2 eggs  (2 whites and 1 yolk)

  • 1 tsp. of baking powder

  • 1 tsp. greek yogurt

  • Touch of cinnamon

  • ¼ cup of raisins

  • Pinch of salt (optional)

Preparation:

  1. Preheat oven to 375 °F

  2. In a bowl combine all the dry ingredients together (oats, chia seeds, baking powder and cinnamon, salt); set aside. 

  3. In another bowl, mash the bananas with a fork.

  4. Place all ingredients into a blender and blend until the mix becomes uniform.

  5. Pour the batter into a greased non-stick mini loaf pan, and add some raisins on top.

  6. Bake for 25-30 minutes or until a toothpick comes out clean.

  7. Let the bread cool for 5 minutes and serve with toppings of your preference. 

  8. I personally like it for breakfast with greek yogurt, strawberries and honey on top. 

Note: If you do end up with leftovers, store it in a zippered plastic bag or wrapped in plastic wrap and it will be good for 4 days.
