Gluten-Free Banana Bread
These loaves are so easy and fast to make. I can say this is one of my favorite recipes, works as a snack, breakfast or dessert.

Ingredients:
2 ripe bananas
1/4 cup of rolled oats
1/4 cup of almond milk
2 tsp chia seeds
2 eggs (2 whites and 1 yolk)
1 tsp. of baking powder
1 tsp. greek yogurt
Touch of cinnamon
¼ cup of raisins
Pinch of salt (optional)
Preparation:
Preheat oven to 375 °F
In a bowl combine all the dry ingredients together (oats, chia seeds, baking powder and cinnamon, salt); set aside.
In another bowl, mash the bananas with a fork.
Place all ingredients into a blender and blend until the mix becomes uniform.
Pour the batter into a greased non-stick mini loaf pan, and add some raisins on top.
Bake for 25-30 minutes or until a toothpick comes out clean.
Let the bread cool for 5 minutes and serve with toppings of your preference.
I personally like it for breakfast with greek yogurt, strawberries and honey on top.
Note: If you do end up with leftovers, store it in a zippered plastic bag or wrapped in plastic wrap and it will be good for 4 days.
